Determination of physiochemical characteristics and antioxidant properties of selected climacteric and Non – climacteric fruits

چکیده

Fruits being fundamental nutritious sources in the human diet due to their high nutrient content and antioxidant capacity, can be classified as climacteric non- fruits based on ability ripen after harvesting, where which plucked are known those cannot harvest non– fruits. The study was carried out analyze properties of selected non-climacteric were taken from four different colors: red, yellow, purple, green. chosen under category Red lady papaya (Carica papaya), Mango (Mangifera indica), Madan/ Jamun (Syzigium cumini) Ceylon olive/ Veralu (Elaeocarpus serratus) while non - Watermelon (Citrullus vulgaris), Pineapple (Ananus sativus), Grapes (Vitis vinifera) Indian Gooseberry/ Nelli (Phyllanthus emblica). DPPH scavenging activity IC 50 Values Jamun, Lady Papaya, Mango, Olive mg/mL 3.45, 12.34, 15.35 8.49 respectively. – Grapes, Watermelon, Gooseberry 26.78, 11.84, 0.95 2.62 TSS values olive 10.600 ± 0.529, 12.533 0.416, 16.367 0.404. 14.000 0.500. 14.667 0.611, 6.80 2.95, 14.13 ±1.86, 10.467 0.503 respectively..
